There’s something magical about a salad that feels both bright and comforting. Fattoush hits that sweet spot—crisp veggies, toasted pita, a lemony dressing, and that little sparkle of sumac that makes every bite feel alive.
It’s quick, colorful, and so easy to fold into weeknight meals… especially when life feels busy but you still want something wholesome on the table.
This salad comes straight from the heart of Middle Eastern home cooking, and it’s one of those dishes that truly welcomes everyone—apartment renters with tiny kitchens, moms juggling dinner time, or anyone wanting more greens in their day. And the best part? You can make it your own with whatever fresh bits you have in the fridge.

Ingredients
- 2 cups chopped romaine
- 2 tomatoes, diced
- 1–2 cucumbers, chopped
- 3–4 radishes, sliced
- 2 green onions, chopped
- Small handful of fresh mint (optional… but lovely!)
- 1–2 pieces of pita bread, toasted or lightly fried
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp sumac
- Salt + pepper to taste

Instructions
- Toast or lightly fry the pita until golden and crisp. Break into bite-sized pieces.
- In a bowl, combine romaine, tomatoes, cucumbers, radishes, green onions, and mint.
- Whisk lemon juice, olive oil, sumac, salt, and pepper.
- Toss the salad with the dressing, then add the pita just before serving so it stays crunchy.
- Give it one final sprinkle of sumac… a small touch that brightens everything.
